Shrimp Fajitas are a great twist on regular fajitas, plus it’s a great way to switch up the protein in meals. I love finding ways to make some restaurant favorites at home. Now since I am one of the only ones who eat shrimp in the house, I made them off to the side of my Blackstone while I had chicken fajitas and steak fajitas going as well.

I love making shrimp any time I can, shrimp tacos are my favorite so I knew that shrimp fajitas would be amazing! Initially, I was a bit nervous that they would not cook very evenly on the Blackstone griddle, but I was pleasantly surprised. I had the Chicken Fajitasand Steak Fajitas cooking simultaneously. Now I knew that I would be the only one eating these at my house, so I didn’t make a huge batch of them.

Old Bay Seasoning

Tequila– You can omit this ingredient if you want, I like to use it to help flavor and tenderize the meat as well.

Vegetable Oil

Water

Lime Juice

Orange Peppers

Red Peppers

Red Onion

Minced Garlic

Limes

Fajita Seasoning

Chili Lime Seasoning

How To Make shrimp fajitas on Blackstone Griddle

Defrost your shrimp, I soak mine in cold water.

Once your shrimp are thawed and remove the shells from the shrimp. Be sure to remove and de-vine them if they are not already de-vein

Start with a container or a bag to allow the shrimp to marinate before cooking.

In a bowl or bag combine your Tequila, Olive oil, Chili Lime, Water, Lime Juice, salt, and pepper into the bowl or bag.

Allow your shrimp to soak in the Fajita marinade for at last a couple of hours to overnight. Mine ended up sitting for about four hours.

Before you are ready to fire up the griddle cut up your peppers and onions.

For Fajitas, I recommend cutting the peppers into quarters and then sliced them into long slices.

Once you’re ready to start cooking, fire up your Blackstone griddle.

Re-oil your griddle; I always re-oil to make sure my griddle won’t stick and cooks well. Be sure to check out -> How To Care For Your Blackstone Griddle.

When your griddle is ready to cook turn the heat down to low and start to drop your meat onto the griddle top. I turned the heat down on low and then dropped the meat on.

When your shrimp is about half cooked mix your veggies into your meat. I made this at the same time as steak and chicken fajitas so I spread my veggies out. Now since shrimp would cook faster than the other meat, I threw the shrimp on the griddle closer to putting the veggies on.

Cook until your veggies are tender and your meat is cooked.

Remove and then clean your griddle with the Blackstone Scraper in the Blackstone Accessory kit.

Re-oil your griddle if needed.

Butter both sides of the tortillas shells and throw them on the Blackstone to grill them up.

How To Store Shrimp Fajitas

Store in an airtight container or bag for up to three days after making them. They will not freeze well since it is seafood.
