What is the difference between lo mein and chow mein?


Both the chow mein and lo mein dishes that are served in most American-Asian/Chinese restaurants are chinese noodle dishes.


The main difference in lo mein and chow mein are the ways in which they are prepared.


Chow Mein:

  • Uses flat egg noodles,which are crisp fried or stir fried till crisp.
  • The sauce is almost same in both the noodles preparations.
  • Also the vegetable choice is similar but you can always vary the dishes with addition of protein of your choice.
  • The noodles are par-boiled and then stir-fried till crisp and served along with stir-fried veggies,chicken/shrimp/pork or any other protein choice.


Lo Mein:

  • Uses egg noodles,round and chewy texture noodles.
  • Here the noodles need to be boiled and then used in the dish.
  • The final dish soft and chewy noodles,compared to chow mein where the noodles are crisp pan fried.
  • In this dish the noodles are soft which soak up most of the sauce,not stir-fried but tossed with sauce and cooked noodles.

The sauce mix is the most important ingredient that will decide the final dish flavor.

Lo mein Noodle ingredients are mentioned under:

  • Egg Noodles: Soft,round,chewy noodles are the best choice for this dish.
  • But if you can't find these egg noodles for lo mein then you can use any noodles as per availability.
  • Even ramen noodles would do too.
  • Sauce Mix: Here the easy sauce mix is the most important ingredient in the recipe. The sauce defines how the final taste of the dish would be.
  • I have not added oyster sauce or fish sauce but you can add too.
  • Vegetable Choice: I have added celery,bell peppers, scallions,carrots,onion. But you can also add snap peas,broccoli too.

What is lo mein sauce made of?

To make the delicious homemade noodles, I have made a delicious lo mein sauce mix.

The sauce mix contains dark soy sauce,light soy sauce,sesame oil,vinegar,sriracha,sugar,vegetable stock. Mix this and keep aside till you need this sauce.

In the sauce mix you can also add oyster sauce and fish sauce if you are fine with the addition of these sauces.

What noodles are used in lo mein?

The best noodles used in the lo mein recipe is egg noodles but if you do not find them close to you then you can even try any chinese egg noodles or even ramen noodles too.

For Lo mein the ideal noodles are round,soft,chewy noodles which are boiled and then used in the recipe to be tossed with veggies and sauce mix.

How to make authentic lo mein recipe from scratch:

  • Firstly, cook the noodles as per package instructions. Toss them with little oil and keep aside so that they should not stick together.
  • In a mixing bowl,add the ingredients for the lo mein sauce and mix well.

  • In a large wok/pan, add oil and add the ginger and garlic.Once its hot,fry it till starts browning.

  • Add the vegetables and start frying them on medium to high heat. Make sure they don't burn.
  • Reduce the heat and add the noodles and sauce mix. Increase the heat again and start tossing everything so that everything is mixed well.

  • 1.5 Tbsp Dark Soy Sauce The 30-Minute Authentic Lo Mein Recipe (12)

  • 1/2 Tbsp Sesame OilThe 30-Minute Authentic Lo Mein Recipe (14)
  • 1 Tbsp Sriracha or more as per spice preference
  • 2 tsp Sugar or Brown Sugar

  • 2 Medium Scallion,1.5 Inch long cut
  • 1/4 Cup Carrot Sticks
  • 1/2 Cup red and Green Bell Pepper,sliced
  • 1/3 Cup Celery chopped/sliced

Instructions

  1. Cook the noodles as per package instructions and toss in some oil and keep aside.
  2. In a mixing bowl,add the sauce mix and stir well and keep aside.
  3. In a large wok/pan/skillet,add oil.
    When its hot,add the garlic and ginger and fry till fragrant.
    Do not overcook on high heat,it will burn.
  4. On medium heat start adding veggies one by one and keep stir frying them,except reserve some scallion white and green cut for final use.
  5. If more oil is required to adjust then adjust accordingly.
    Add the noodles,toss further.
  6. Add the sauce mix and toss further and cook high heat now till a nice aroma comes from the cooked noodles.
  7. Finally add the scallion reserved pieces and adjust salt.
    Serve while hot!
